Weekend Cooking

I've been interested in soba noodles for a while now, and finally took the plunge today with this dish from DanaTreat. The noodles I purchased had wild yam in them, which was initially exciting because I anticipated a subtle sweetness, but I later learned that the yam mainly just provides the starch to hold the noodle together. Regardless, they're full of protein and whole grains, a much smarter noodle than most. The recipe calls for chilis, but doesn't include it in the ingredients list and definitely needs them, so make a note! Mine are a tad oily, but delicious, with ginger, shiitakes, bok choy, and cilantro. For lunches this week I made a salad called "chickpea of the sea"...as you might imagine, it's vegan tunafish. I won't disturb your visual sensibilities here with a picture, but I will say it's actually pretty decent. I used greek yogurt instead of the called for mayonnaise, so mine is a bit tangy, but I think if you were to use actual mayonnaise it would be even better.
