Weekend Cooking

I was a cooking fool today! Basically all I did besides a gym visit. It all started with this here quiche from Whole Living that I've been wanting to make forever but a quiche is kind of a commitment on a Sunday morning. However, today I followed through, and it was great! I would recommend adding in a little butter or oil to the crust prior to baking, it came out a little flour-y without a wet ingredient. I also used spinach instead of chard, added sundried tomatoes, and replaced the nutmeg with cumin.

Next I decided to try this quinoa loaf from the Whole Foods recipe site. What's appealing (if it tastes good, I haven't sliced it yet..) is that I can take an individual slice with arugula to work and eat it like a veggie burger. Fingers crossed that this goes according to plan because mine definitely does not look like theirs..

Last I revisited an eggplant dish from Dana Treat that I really like. It's a healthy version of a cream based indian dish, and I tried to take a picture to share but my phone made it look gross, which is the opposite of what I'm going for here. Similar to babaganoush, you roast the eggplant, scrape out the insides and then cook it down with a bunch of spices. Seriously guys, yum.

Beans, Beans

I'm on track to break records in bean recipe execution - at some point I must have challenged myself to test the limits of bean variations. Seems endless, but along the way (last weekend) I discovered this guy from Cooking Books. I like the blend of black and pinto, nice compliments, along with the new Mexican chili's. And I used my immersion blender, kitchen gadgets!

I also recommend Clean Food by Terry Walters for more beans, and am highly intrigued by black bean brownies from 101Cookbooks.

I'm halfway finished with this book, and highly recommend it as a comprehensive look at native populations in the Americas before Europeans invaded. The text is packed with background on these complex civilizations, and how truly early they arrived - or if they even "arrived" but rather "originated". American studies are often overlooked and rarely discussed, 1491 does a great job of filling this gap.

The Creators Project

Really into how this project showcases super talented and creative people from all four corners, so many to watch! A favorite below, we actually saw some of their Basel work in Miami.

I'm planning to revisit this butternut squash and chickpea salad this week, over quinoa with tahini dressing. Yes please.

Sub City New York

I wish exiting the subway was this peaceful, I'm usually stressed and light headed from running up a zillion stairs. The short "is about that moment in New York when you emerge from the subway and find yourself in a new and sometimes unexpected world." Not to ruin it, but that elevator? Someone most likely peed in there and called it home.
