Weekend Cooking

I rolled out the winter vegetable standbys for hopefully the last time this week. This roasted veggie salad with walnuts and feta is from this month's Food and Wine, and is actually provided by Sophie Dahl, Roald Dahl's granddaughter. Love Roald Dahl, Sophie Dahl by association, and this salad. Recommend!
Next came this barley, leek and mushroom stew from Andrea at Cooking Books. Her blog is great, because she makes healthy food that tastes good and this stew is no exception. Again, I recommend it.
Last I made this sweet little number for dessert. Again, an Andrea recipe, and again a healthy take on good food. BUT, I wouldn't necessarily recommend this one friends. It's made with tofu, ricotta and quinoa, sweetened with maple syrup, and my main complaint is with the tofu. Don't get me wrong, I eat tofu almost every night, but in sweets it often comes out tasting odd to me, a bit misplaced maybe. Or maybe I just haven't yet found the right combination. Anyway, I still ate a ton of this and didn't have to feel too guilty, so still good times.
